- 300 gm roasted, unsalted peanuts
- 2 cm piece ginger
- 2 cm piece galangal
- 3 tbsps pounded chillies
- 2 stalks lemon grass
- 1 cup sugar
- 1 large onion
- half cup tamarind juice
- salt to taste
- Grind the roasted peanuts. Put aside.
- Grind lemon grass, ginger and galangal until fine
- Slice onion and stir-fry until soft.
- Add in ground chillies and the other ground
- Add in the tamarind juice, peanuts, sugar and
salt. Simmer until the gravy thickens.
- Use as a dip for Satay.(kebabs)
