Mango Chutney


Ingredients

  • 12 green mangoes - sliced fine or in cubes
  • 750 gm brown sugar
  • 5 - 6 cloves garlic - peeled
  • 1 bottle vinegar
  • 30 dried chillies
  • 1 large piece ginger

Method

  1. Put mangoes in a saucepan, cover with vinegar and boil till soft.
  2. Grind the chillies, ginger and garlic and add to the saucepan.
  3. Mix in the sugar and salt to taste and simmer on low heat until mangoes are soft. Adjust seasoning if necessary. If you require it more sour - add more vinegar.
  4. Cool before storing in airtight jars.
