Ayam Kukus


(Steamed Chicken) Serves 6 - 8

Ingredients

  • 1 chicken
  • 1 cm piece fresh turmeric
  • 1 cm piece ginger
  • 2 cm piece galangal - crushed
  • 1 stalk lemon grass
  • 2 tsps coriander seeds
  • 1 tsp cumin
  • 3 cloves garlic
  • 6 shallots
  • 1 tsp sugar
  • salt to taste

Method

  1. Clean the chicken and cut into four. Wash well and drain.
  2. Grind all the ingredients together except the galangal.
  3. Rub the galangal and ground ingredients all over the chicken and set aside for 30 minutes.
  4. Place in a steaming tray and steam until the chicken is tender.
