Ayam Goreng Berempah


(Spicy Fried Chicken) Serves 6 - 8

Ingredients

  • 1 chicken
  • 8 shallots
  • 2 cloves garlic
  • 1 stalk of lemon grass
  • 3 cm piece of galangal
  • 2 cm piece of fresh turmeric
  • 1 tbsp coriander seeds
  • 1 tsp cumin and aniseed mixed together
  • salt and sugar to taste

Method

  1. Clean the chicken and cut into small pieces.
  2. Grind all the other ingredients and rub over the chicken.
  3. Place the seasoned chicken in a pot with 1 cup water and cook over a medium flame until half cooked.
  4. Remove the chicken and deep-fry until golden.
  5. Dish out to serve garnished with lettuce leaves and tomatoes.
