Ayam Goreng Asam


(Fried Chicken in Tamarind) Serves 6 - 8

Ingredients

  • 5 chicken breasts
  • 1.5 tbsps sesame oil
  • 2 tbsps vegetable oil
  • 3 cloves garlic - crushed
  • Half cup tamarind juice
  • 2 tbsps chilli paste
  • 3 tsps salt

Method

  1. Flatten the chicken breasts with the side of a cleaver. Marinade with all the ingredients. Leave aside for 30 minutes.
  2. Place on a rack under the grill and cook until both sides are golden brown, basting with extra oil and juices if necessary.
  3. Alternatively, deep-fry the chicken over a moderate heat.
